Email for domain - couple of Q's

I have finally decided on a domain name for my email account. But before I buy it I would like some questions answered.

What registrar should I go with? How many @domain can I have? I am initially thinking of having them sent to individual gmail accounts but later setting up a home server to collect and then send to Outlook/webmail. Will this be possible?

Btw. it will be a me.uk one (as co.uk isn't available.)

You can have as many email addresses at your domain as you want. I tend to use a different one each time I register or apply for something on-line so I can filter them into folders and also see if anyone sells their mailing lists. Everything, including a few TescoNet accounts but not Mrs Snapshot's email, is collected by Outlook and sorted into folders by Outlook rules. Mrs S has a separate mailbox but still our domain address at our ISP so her email is collected into her own Outlook file when she can be bothered to use it.

I used my ISP (PlusNet) as my registrar as it only costs a quid per month for ongoing registration and hosting. This means the domain is linked to my PlusNet email and web space which keeps things simple.
 
I am not interested in hosting or "email boxes". I just want the domain which I can point to as many email servers/accounts as needed.

Ideally I would like to see the control panel of a few main registrars where I can see the MX options.
 
Someone's going to have to host it (even if it is purely collect and forward), in addition to handling DNS - gmail et al won't handle email for a domain.

I use Gradwell as registrar and DNS host, then handle mail myself. The control panel for DNS is what you'd expect - a form with name, data, TTL and type (i.e. @, ns1.gradwell.com, 86400, NS), with checkboxes to remove an entry.
