I'm using hMailServer at the moment.

Quite a few anti-spam techniques require SMTP rather than pulling in mail over POP3 which is what I currently do, the machine is not on 24/7 so could I effectively run as a mail server or not really? What would happen when the mail is sent to the machine when it's turned off?
 
Normally the sending server will try a few times to resend the email, then it just gives up and deletes the mail (or leaves it in the queue as frozen on the sending server).

If you are switching the machine off I wouldn't recommend it as a mail server :)
