Epson Printer & macOS

I've just purchased and setup a new Epson WorkForce Pro WF-4740 printer. The printer is great and is a massive step up from what I was using previously.

I have one little issue though, I've been left with two instances under Shared devices in Finder of the USB Storage reader on the printer. I can't figure out how to get rid of the second instance? The printer is connected via CAT5 to my Network.

Looks like it's being shared for PCs as well (likely SMB which Macs also support). Can you change settings on the printer to not?

Yeah the printer is network connected and I can change settings. I've already tried disabling some of them as I realise Apple use their own Bonjour service for device discovery/communication. Every time I try and disable the Microsoft based networking both instances of the printer disappear.

Isn't Bonjour a legacy protocol now? I thought Apple had ditched that long ago? Can't you just connect via SMB which Macs use anyway? Forgive me if I'm spouting nonsense. I'm not a Mac user... yet. :p
