Estimate improvement if I did this

Right, as my sig says I am at 3.2Ghz on a Q6600. Now for that I hardly need to change anything voltage wise (I had to give +0.025V). I know the settings for my 3.6Ghz overclock but the temps are just slightly too high for my liking due to the hike in the vcore. Basically I need to add +0.200V to get 3.6Ghz and my temps pop into the 80s on my cores under IBT.

Now if I upgraded my current single Apache Black for 2 Vipers, would I be able to keep my temps under say...75c under IBT? I know the vcore change is stupid to get an extra 400mhz, so I ask, is this worth it and will I see a noticable difference between 3.2 and 3.6?

As a secondary question too, I have added a slight voltage increase to my NB to help the stabilty at 3.6Ghz, but how do I know when the stabilty issues are from lack of vcore or NB voltages? For instance, it is at all possible that I could drop down my vcore slightly and up my NB voltage and find stabilty? Is there any obvious signs?

I went from 2 apaches to 2 vipers on my Megahalems, changed AS5 paste to MX-3 and cleaned my filters making my load temps in IBT going from 86c max to 72c max.Gaming temps went from mid 70s to barely hitting 60c.

Perhaps the case needs some cleaning?

I am sure there's some experienced people on here who will help you eventually like they've helped me :) but just saying the changes i've had from doing the above.

I had my Q6600 running between 3ghz and 3.5Ghz and although there was obviously a speed improvement, it's not as noticeable as you might think. I suppose on clock speed alone that would be a 17% speed increase and might have netted me a couple more frames per second on games.

Yours would work out at approximately 12.5% speed increase which lets face it although definately worth doing, isn't going to blow your head off with its awesomeness.
