Do EU Countries allow anyone to move there?

I know Spain allows UK and other EU people to move there for 90 days and to seek a job, but do other countries in the EU have such a policy? I believe in mass migration through the EU: All EU people should be allowed to travel freely within the EU.

Also do you need to show passport when travelling via Eurostar/ferrry thing to France?

There should, in theory be free movement of people between EU countries.

Some countries, due to the Schengenagreement, still implement border controls.
 
Any EU citizen can move to anywhere else in the EU. Some countries require you to get a work and residence permit, but due to your status as an EU foreigner, they will not expire and can not be refused. I have one for Germany and under expiry date it says "indefinite".

As for border controls - actually, the Shengen Agreement abolishes border controls for most of the signatories, notable exceptions being the UK and some Nordic countries. Signatories that have implemented the agreement in full will let you travel without a passport, as long as you have some kind of valid ID (driver's license, national ID card, etc.)
