Exchange 2010 and forwarding undelivered mail

We are now running an Exchange 2010 server setup.

Under Exchange 2003 we were able to set things up so that if the Exchange server failed to deliver a message it was forwarded to another host.
Example:

Exchange system known as mail.ourdomain.com
If the Exchange server failed to deliver the message then it was forwarded to gateway.ourdomain.com

I cannot find the same option anywhere in Exchange 2010.

Does anyone know if it exists and where it is?
 
He doesn't want a catch-all, what he wants is to set up a transport rule to forward unroutable mail to another smart-host.
 
I believe (after looking at our 2010 install) that you want to change your accepted domain from "Authoritative" to "Internal Relay", as this way exchange knows that it shares the domain with another server.

We have that set up for the domain of our sister company who we are in the process of migrating to our exchange system.

Users that have been migrated are assigned their "old" email address from their own domain as well as a new email address from our domain. Their old domain has been set up as an external relay domain.

If i try to send to a migrated user using their old email, it gets delivered to their mailbox on our system. If i try to send to a non-migrated user it gets forwarded to their old email server.

We then have a send connector set up for their old domain to send email direct to their server (though a leased line we have to their office).
