Extremely high GPU temp/weird fan sounds with new build.

I bought and added this to my pc today:
AMD Phenom II X4 Quad Core 965 Black Edition "125W Edition" 3.40GHz (Socket AM3)
Gigabyte GA-78LMT-S2P 760G (Socket AM3+) DDR3 MicroATX Motherboard
GeIL Black Dragon 8GB (2x4GB) DDR3 PC3-10666C9 1333MHz Dual Channel Kit

It booted up fine, no probs. I started Minecraft (Without even playing the game) and the GPU went from 45C idle to 80C. Where as when I played BFBC:2 max settings the temps hit 60C max. A fan sounded as though it was speeding up then slowing down really quick, almost like a siren, "weooooooweoooooowweoooooooooow"

Why is this? (Im using Corsair 430W PSU)

Idk my case exact name, it's a bog standard one with back and side fan (nowhere to plug side fan in) so only back fan, with seethrough panel on the side. It's fairly gimmicky. I think they're plugged in properly?!
 
The GPU heatsink is perhaps not making good contact with the GPU die. Temp increase should be more gradual and so should fan response.
 
Does this only happen in the minecraft menu? There are some games that cause both nVidia and AMD cards to whine in the menu screen due to not having a framerate limiter enabled (I know Crysis and the Stalker games are known for this)... I suppose this could also stress the PSU if it's not upto the job.
 
I'm going to guess those are relatively normal temps for the card, based on a couple of reviews. It has something like a 45-50c delta over ambient at max load.

The annoying sound is probably the tiny fan on the gpu.

I assume you're using a 60hz monitor, so you should limit your frames to 60/59 fps using a frame limiter. I use the rivatuner underlay in msi afterburner, but there are others.

See if that keeps the card cooler. It may be reaching higher temps on the minecraft menu screen because, as powerpie said, it might be pumping out thousands of frames unrestricted.
