I have a 7970 and 3x Benq XL2420T 24" and I'll be looking to set them up over the next few days.

Unfortunately I don't have the DP cable. Is it a simple matter of mini-dp -> DP cable, or do I need an active dp cable?

I can't seem to find a definitive answer, as most people want to go from mini dp -> dvi.

Would it be 'better' to go from mini dp -> dvi or just mini dp -> dp in terms of quality or anything?
 
If the monitor is equipped with displayport then yes you just need a mini dp > daddy dp

The active dp is for conversion of a displayport signal to dvi/hdmi/vga through a chip for when you are using any 2 of the dvi-dvi-hdmi connectors (as the card can only supply 2 simultaneously unless otherwise designed) and want to attach a third dvi, hdmi or vga monitor.
 
If its any help i have a 750D and use a mDP > DP and it works fine @120hz. If you go mDP > DVI you wont get 120hz goodness as it would be single link DVI. You'd need one of these what's an expensive way of doing things :D

I have virtually the same set up as you ,
I use 2 x mini dp to dp and 1 x dvi-d
