I used eyefinity in portrait mode for a bit (so fov was only slightly higher than normal). You do have an advantage in a way, but the screen space is so large that you end up having to physically turn your head to look at things - which is a disadvantage.
Surely you only get what you'd normally have on the central screen though, I suppose that if you're good at picking out movement in your peripheral vision, it'd be good. But thanks for pointing that out... I sit quite close to my 24" screen and find myself having to look around sometimes, never mind with 3 of them!
