Hey all. Need some advice about my first eyefinity setup please.

I currently have this gfx card:

Sapphire ATI Radeon HD 6870 Vapour-X 1024MB GDDR5.

It has the following outputs:

1 x Dual-Link DVI
1 x HDMI 1.4a
2 x Mini-DisplayPort
1 x Single-Link DVI-D

I have two existing 23" monitors (matching) with DVI connections. Can I hook those up to the DVI outputs, hook the following monitor up to a mini-DP output, and run a three-display eyefinity setup?

Depending on what games you play the 1gb vRAM may be the bottleneck, but yes it should add extra performance.

However, give it a go with the single 6870 first, and see how you feel with it. Personally I would save up and go for something more beefier like a single 7950/7970/670/680, they have a lot of vRAM that should help with Eyefinity.
