Fallout 1 and 2 on Steam have censored intro's, cut children, and drugs are instead referred to chems (as based on the latest patched UK version), but it also does come pre-installed with a high-res texture pack of sorts iirc. None of these changes are too big and don't really have much of an impact on the course of the overall game.
People will defend these games for being the "true" fallout experience - maybe even the best, and for good reason, but they are fairly aged at this point and are completely different to what you will find the in later 3D renditions of the series - especially 3.
For me personally, Fallout: New Vegas is the best of both worlds, and is my favourite game out of the entire series (for a lot of reasons). It just feels more like a more well thought out and deeper RPG then 3 ever was. I can't be bothered to explain

3 does have more favourable/higher reviews, mainly because it was people's first experience with Fallout, and it was a pretty impressive open world when it first launched towards the beginning of the last-gen console cycle.
