Is my grandads sister a Great Auntie ?
and if so then is my Great Auntie's Daughter my auntie ?

Your grandads sister is indeed a great aunt. I don't think her daughter would be more than a 1st cousin once removed.

Isn't it technically grand aunt, with your great grandmothers sister being your great grand aunt? Great implies there is a 3 generation gap.

My Nan's Sister was my Great Aunt, her Daughter was my 2nd Cousin.

A second cousin would be your Grand Aunt's daughter's/son's child. Sounds a case of "it was easier to say than 1st cousin once removed."
