I have an Antec P280 and just replaced the stock Antec silent fans with a pair of Corsair AF120 Quiet Edition low noise.

They aren't exactly 'low noise'. Yes they push a lot of air, but they hum much more than the Antec and you can hear my office PC down the hall.

My question is how easy are fan controllers to install, do they come with extender cables etc? Any suggestions on which to go for?

Or should I just downstep the voltage of my AF120 with the included 7v resister wires?

depends on the controller, the recon for example was easy, came with all the cables needed to cover the distance of even a big tower case like the switch, the recon has 5 3 pin connector so you just screw it in place plug the fans in give the unit some power from the molex connection and away you go, the recon does also have usb header options too that other controllers dont. It really is that easy

I got a Fan Mate 2 modded with velcro on the inside so that the dial pokes through one of the water cooling holes at the back.. i'm sure u can get a fan splitter for the Fan Mate to hook a couple of fans to it.

Heres a pic of how it looks from the outside..

Not bad for £2.99 although This Week Only offer @ £2.40 ;)

Haha, good idea MyBrains. Not sure if it's designed to power too many extra fans though. :D

I have the Recon, it's not bad and look's great. I would rather have a Lamptron though.
