Fancontrol of a CPU/GPU custom loop?

I currently have a custom loop cooling the CPU with a remote controlled pump/res combo from Enermax. The loop has no way to measure liquid temps, so I'm stuck with using the BIOS Smart Fan on my Gigabyte to control fans...

... however I've got a GPU block coming in real soon, which means the sensor on the CPU isn't going to be particularly accurate anymore (especially in GPU only scenarios)

How would I go about getting the best fan control based on sensor readings in Windows? I've tried downloading Speedfan, but it doesn't appear to be detecting my Ryzen 4 sensors at all, HWInfo can read them all, but I see no way to control the fans there.
