My fan in my old seasonic 312-II has suddenly become very noisy, tried cleaning / oiling etc but no improvement...

Anyway this is the first time i have opened a psu and of course noticed the 2 pin fan connector. So can i use a 3-Pin to 2-Pin Fan Adapter Cable and fit a 3pin fan to the psu?

If yes anyone know where i can buy a 3-Pin to 2-Pin Fan Adapter Cable, thanks!

Alternatively you could snip the wire to the old fan and snip the plug off the old fan and solder the wires together and then either slip some heatshrink or insulating tape over the join. The third wire is the speed sensing wire and is not needed by the psu.
