Feel silly asking this question but...?

Go with the AMD64 version even for Intel. I think it's AMD64 just because AMD were the first to implement 64 bit architecture.
 
You can use either - but I would use the i386 version personally as I had a few problems with flash on amd64 last time I tried (if you use the PAE kernel you can use all your memory). Having said that I know lots of people use amd64 just fine.
