I've got a golden retriever and although i wouldn't class it as a big dog it is still nearly pure muscle. When we play fight the only way to get her to stop is to pin her to the ground, we play fight quite rough sometimes as i'm a big guy myself and little punches that ordinarily give mates dead arms seem to do nothing to her, and it doesn't get her angry in the slightest. She loves me dearly and would never do anything to seriously hurt me, but if you can't get her pinned properly she will use any and every tactic to get out of it, and a lot of the time its successful. However it is possible for her to get pinned with just my bodyweight and one arm, leaving the other arm free for possible attacks....
Although the absolute best way to stop her when shes biting your arm is to jump your bodyweight over her so the arm being bitten is wrapped around her shoulders and fling her to the ground, as she rolls follow through your own roll and you'll end up with your arm holding her head down and your bodyweight on her... follow this up with keeping her still when she struggles and stroking the back of her head while making a "shhhhh" sound will relax her totally up and its quite often she will actually fall asleep.
Fighting a dog for the majority of people is a situation they will never win, the best thing to do is calm it down, the easiest way is changing its mindset from agressive to submissive... restricting its movement and making calming noises are the best way to do that.
People keep throwing out examples of massive dogs but no follow through with massive people, an average dog (retreiver, labrador, alsation) would not win in a fight to the death with an average person.
