File Associations in OSX

Just like in Windows, you can right click and open a file in an application of your choice and tick 'Always Open With'

However, despite me telling it to open MOV and MPG files with VLC. It constantly reverts back to Quicktime.

I've tried Google and I can't find anything helpful. Surely OSX has some sort of settings where you can choose the default applications for opening files? Alternatively can I kill QT all together, it's a terrible memory-hogging application.

Select a file and hit CMD+I and you can choose the default application there. Don't forget to click Change All so every file of that type opens in that application.

I've done that but Quicktime constantly over-rules it and resets the file associations.

Weird. Doesn't happen with me.
