File/Folder Level Recovery - Server 2016 & Hyper-V

Is it possible to recover files/folders from a VM when using the following setup:

Windows Server 2016 Standard
Hyper-V
Windows Server Backup

Yes, assuming you set it up correctly and are backing up the actual data folders rather than the VM disk files.

When setting up WSB there is no option of backing up the data folders inside the VM, it only allows selection of the VM's under the Hyper-V tree.

Surely you can set up WSB inside the VM?

You can, but that'd mean I'd need 2x sets of USB drives for each VM as we're going to have two, using the host to backup I only need a single set of drives.
