firefox character encoding set

Mine seems to not use what everyone else uses. Im wondering which is the standard set to use and how to make firefox always use that set. At the mo its on Western (ISO-8895-1)

Please help cos im sick of seeing *^) stuff for things like It's (the ' can be a few characters instead) etc.
 
I still need advice on which set to use as with western i get incorrect characters, unicode UTF 8 gives better accuracy. But how do i force it for every page i go to?
