This was gonna be my first - already had 2 changes recommended by OC tech staff (manyy thanks) - anyone else suggest tweaks to this spec to improve the performance.

I'm looking to make a gaming machine which doubles up as a TV recorder - hence the decent sized Hard Drives.

One other question is what would be the best way to set up the hard drives:

Changes suggested by OC: I would however recommend using a different PSU something like the Tagan TG530-U22 530W ATX2.01 2Force SLi Compliant Silent PSU (CA-005-TG) as the Antec NeoHE is a "High Efficiency" PSU and doesn't have as good a power rating so isn't really recommended for gaming rigs. I'd also advise against Windows 64bit

I agree with that.

Should be a decent rig. You might want to consider the X1800XT.
 
Don't get Windows x64. Change it to windows XP Home or XP Media Centre, they are both cheaper and just as good. I'd go for media centre as you are getting a TV card.
