First decent monitor help

I'm in the process of building my first 'proper' pc so i have zero experience at picking out an appropriate monitor and i'd appreciate a bit of help.
I will be using this computer about 50% for photo and video editing and 50% for casual gaming, from what little i understand from some googling of the dizzying array of assorted monitor specifications i think an IPS panel would be best for me but apart from that i really don't know. As far as i can tell the general consensus for monitors is 'bigger is better' however i intend this computer to be as portable as possible so im cramming as many components as i can into a SFF case and i need the monitor to not be so big that i can't put everything into a smallish flight case for transportation, is there some kind of monitor comparison chart somewhere online that lists more accurate dimensions than just the diagonal screen size?
Any monitor suggestions that strike a balance between best picture quality for my specs and portability would be awesome.
Also as i said before i don't know much about modern monitors (my last monitor was a school grade crt) this might sound like an odd question but can the majority of monitor screens be removed from their stands? Removing the stand would more easily allow me to slide the screen into a padded flight case and pack the stand separately...

What about G Sync monitors, if I understand them correctly they're supposed to ensure a smoother experience, would it be something worth investing in?
