Is it fairly straightforward? I changed my ram, gpu, and cpu easily. CPU was a bit more tricky as I had a back plate which kept falling off and I had to selotape it temporarily so it stayed in place until I screwed in my heatsink.

From what I know there are the CPU cable, GPU cable, 24 pin motherboard cable and HDD/SSD cable
Routing the cables through the case looks like the most difficult

I currently have a cooler master 500w. However if I get a more powerful GPU in future I'd consider the corsair rm750x . My current gpu is a rx 580 which performs fine

Yeah, it's straightforward to change and get working :) Just make sure you get a modular PSU so you only have the cables you actually need hanging around. Even then it's hard to keep everything tidy.. well I find it hard anyway!

That's pretty well much it, apart from putting it in the case with 4 small screws. Routing the cables is the worst part as you said, though modern PC cases make this easier & you can tie up the loose cables away. You may need some cable ties & a nail cutter to cut said cable ties if you need to.
