Budget of £1600 for a flight sim with 3 TFTs. Please note two GPUs are needed so SLi was specd, but wil not be used.

Games to be "played" FS 2004, CFS3

Can anyone do better?
 
I can't see anything obviously wrong with it based on the uses you have specified, you'd get better or at least comparable performance from a single 7800gt than 2x6800gs with less hassles but since you need 3x outputs for the monitors I can see why you have done that.

I also suspect you will soon need a bigger hard drive, I don't know much about FS but I understand that they suck up hard drive space.

Yeap, for the standard stuff. However, start adding mods etc onto it and things start to snowball...
 
A faster HD (Raptor) will certainly improve load times - and reduce freezes with complex scenery files like VFR. Your main central screen could usefully be better spec (say, a Dell 20") whilst the others could be more modest screens. Similarly, the primary gfx card could be high spec, the secondary much lower. Depends how you want to set it up - whether you have the instruments and nav on the satellite screens or flight view on all 3 and using popup windows.
 
A more expensive screen is out of the question because of the budget.

What do you mean primary GPU, you mean the centre screen should have the more powerful GPU.
