Folder Contents Missing Occassionally

I've got a server running Windows Server Std 2016 ontop of a hyper-v setup. The server acts as domain controller (Active Directory), DNS and file server.

From time to time, when I access a folder that's on the server from my workstation PC, it will show a handful of files or folders but not everything. I can't open files that are on the drive (from recent files, etc) as it tells me the file does not exist. After about 10-15 minutes, it regains consciousness and everything appears normal.

Could this be a fault with my server itself playing up or is it likely a software or configuration issue?
 
Is the hard drive set to sleep / spin down after X minutes?

I've had this before and it's the hard drive gone to sleep and spinning back up again.
 
It sounds like the machine is losing network connectivity and using offline files. Try disabling offline files in Sync Centre in control panel.
 
Thanks I've disabled offline files and also set the power mode on the server to high performance and disabled putting the hard drives to sleep. Will see if that makes a difference and post back.
