What's the obsession with eating things alive?

I forget the name but there's this concept in China that wild animals are healthier than ones bred to be eaten, that certain parts of animals provide health benefits for certain areas of the body - the usual woo related to so-called Chinese Medicine - and I assume if that means the fresher the animal the better, the logical consequence is that one that's still moving or is killed in front of you is better than one that's been dead for a while and already prepared for consumption.
