formatting in vista 64

Quite weird really. I had win xp pro installed and thought that on trying to install Vista it would give me the option to format the old operating system so as to have a clean install. The only options that appeared was the upgrade option that was greyed out and a straight Vista install. Vista actually kept the old operating system so that every time I boot it gives the option (1)Vista and (2) Old Windows. I can't be bothered to change things now as everything seems to be running fine: but for future refference does this always happen?
 
I just reformatted last night, and when you select what disk you want, there is an 'advanced' option. Thats where format is.
 
click advanced, then remove the partition (during setup)

setup procedure (for the average user) is largely the same on vista as xp, just has a nicer gui and more methods of adding raid/sata controllers
