I remember playing delta force a few years back and one really cool thing about it was the ability to set up a camera and watch what the enemy were up to from the other side of the map, is there any other games that have cameras in them I don't know why but I really like the idea of setting up cameras to spy on the enemy

Not fps but you can do it in splinter cell games.
