Free floating 3600 - what would you build?

I'm contemplating upgrading my 3600 to something in the 5x00 line, didn't matter what. It would leave a free floating 3600.

What would use to build a small machine for the children, maybe running some play VMs. Every time I try I end up with a significantly more expensive basket than I'd like, because I find it hard to compromise on things. Slow RAM. No drive should be below 1TB, or I'll just have to replace it next week, etc. I end up with massive feature creep - which means I don't order anything.

What would you build? Or should I just sell it?
 
I always liked the idea of an ITX living room build with a cheapish GPU in for some 720/1080p gaming, or it'd be perfect for a streaming box of sorts? Someone at work has made a living room retro PC for sofa gaming old titles.

Our son is 5 at the moment but if he was a bit older I'd probably upgrade my 970 and get some cheap second hand parts to fill it out to make him a little PC for himself as he enjoys Minecraft, WoW and a bit of Valheim.

That does sound like the sort of thing I should do, but... in today's market, what GPU?
