It's hard to see any development in VR circles of that glory era of the 80's/90's machines. I presume you know of the DX layouts? it's not beyond the realms of possibility that some could translate those layouts in to a generic machine in VR. Virtual pinball made it over to VR after being ported by a single guy, it's layouts translated over by the community, and people have ran with it and created VR rooms for the full experience.
Id suggest you fling the idea of that around the dedicated coin op forums, that how it got started with the pinball. VXP is the mutts nuts in VR, likewise standing over a arcade cab in Neon Retro Arcade, they feel like the real experience when done right with an arcade panel or pin sim.
What's available in VR wise, Pokerstars VR just added slots. I hope one day that the Coin Game makes it over to VR, we keep pestering the developer.

All combined i have over 1400hrs in VR pinball. Been playing for over 40 years, i'm a table owner, VR has totally changed my buying habits and need to traverse the country in search of a game.
Totally recommend you look in to VPX VR if you want to recount the glory years of 90's pinball, there's an active community constantly moving it forward as well as building a future pinball engine that'll succeed VPX.
Another is Zaccaria Pinball probably one of the best looking games in VR, some of the tables look photo real and overall is probably my favourite of all available. Their business model is fairly sound too, a mere couple of quid for a new table every 2 or 3 months, of which the last few deluxe releases have been very good.
Despite dropping over 750hrs in FX2VR, it's not something i return to often these days. Zen as a company have dropped the ball among the majority of the faithful that supported them with their recent business decisions.
