It's a patch lead from the ONT to the Router - Cat6 will certainly do 10gb over that distance, as in all likelihood will Cat5e.

It's irrelevant as the ONT won't do 10Gb though and will need replacing before then.
 
Any old cable will be fine. Hell I’ve got a 30 metre run of cat5e that’s running perfectly well at 2.5Gb speeds without an issue. To make it worse it’s CCA too but it’s still giving me full throughput with no problems.
