Full frame/low light camera recommendations please

I'm currently considering upgrading my 'big' camera (from 7D Mk II). I'm not a big DSLR user these days (not a fan of the weight, and a firm believer in the best camera being the one you carry with you), but there are circumstances where a big sensor is the only way. I'm particularly interested in anything with good low-light video shooting potential, but it still needs to be a capable all-rounder. Astrophotography is a likely use case. I've also done things like airshows in the past, so reliable motion tracking would be nice. I've also done sporting events, but DSLRs tend to be banned from those these days, so not too worried about that. While I'd obviously prefer to stay with Canon, my only 'official' full-frame lens is a 100-400L (airshows!), so to go full frame I'm going to have to buy lenses anyway - if there are better options, I'm open to them.

I've recently seen great results from the Sony A7S, so that's the sort of direction I'm interested in going, though I'm not sure if that's too much of a specialist. Any suitable recommendations, Canon or otherwise, DSLR or mirrorless, welcome please.

I'd like the budget to be somewhere close to £1,000 including a lens or two, but will stretch that towards £2,000 if presented with a compelling reason. Second-hand is an option, but would need advice on a reputable supplier (my 7D2 is second-hand and on getting it professionally cleaned, discovered it had a few minor sensor imperfections).
