I know this is a 'how long is a piece of string' subject, but I'm hoping for some real-world examples that will help build a picture. What kind of battery life could a well-balanced (i.e. it has a realistic battery capacity) higher Watt version of a 3060 or 3070 gaming laptop achieve for a) gaming and b) desktop stuff?

Are we talking 4 hours of light gaming and 8 hours of desktop? Or is it more like 2 hours of gaming and 6 hours of desktop?

Well you genuinely wouldn’t want to game on battery as performance is woeful at best.

Best just to set battery saver profile for when on battery and get the recommended max for your laptop.

I can't speak for the 3000 series laptops but my general experience has been on battery you tend to get more like 2 hours on performance modes gaming and 6-8 hours general desktop. What performance is like for gaming while unplugged can vary quite a bit as well - some you will get close to plugged in performance and/or options to vary performance level on battery while gaming even to the detriment of battery life others will hold performance back a lot on battery irrespective of what you choose.

EDIT: Looks like performance gaming with these 3000 series laptops an hour of gaming is more likely :s

Yes, I did some research and found that an hour is a possibility. I also didn't know that gaming laptops perform worse on battery than on the mains - I assumed they went at full throttle and the battery just drained faster.
