The Antec and Corsair PSUs are both decent and should be fine for 570 SLI.

A second card requires you to add another ~225 Watts. You need a 750+ Watt power supply unit if you use it in a high-end system (800+ to a KiloWatt is recommended if you plan on any overclocking).

Is the price difference between the EVGA graphics card and ASUS graphics card not worth the performance difference?

Looks good, hmm price on the Asus has gone up from £306 to £320, i suppose its upto you im not sure how much more performance that pre-oc'd evga will give, not that much of a difference in price now. But you could always overclock the Asus one.
 
You also don't need the 8gb of ram just for gaming. 4GB is more than enough. Anything more is only useful if you're video editing etc.
