I was led to believe the antec psu would be fine to run all but the very highest spec crossfire set-up

The Antec PSU ought to be fine, other people are running fairly similar systems on that PSU however if you want to change it this might be suitable and will still fit into your £1,100 budget.

This is over budget but probably what i would have went for. Its similar to your spec with a few changes

Thinking about some other graphics cards to save some money. Whats the 1800xt like? will it make a lot of difference between 512 and 256 ? taking into account I like to play games on top settings at top resolution.

In many people's eyes the 1800xt is better than the 1900xt so you could save yourself money buy going for the 1800xt and have a better card too.

The difference between 256mb and 512mb is very small I hear, but if you plan to game in very high resolutions with all settings on the highest it's probably best to go with 512mb.

And the Antec PSU that comes with the Piano case will be fine for your specs.
