Gammon joint / apple sauce

Right chaps, am cooking up a massive gammon joint for dinner today. Going to roast up some spuds, carrots and onions together and also a side dish of steamed beans, picked fresh out of the garden.

My plan is to roast the gammon normally, though I will give it a bit of a salt and pepper rub before it goes in. Am mulling basting it in honey as well but undecided as of yet. This will be for sandwiches all week as well.

I have two apple trees. One with eating apples and one with cooking applies but for some unknown reason , I have never made apple sauce.

Can I go wrong with just putting a load of apples in a pan with some butter and sugar and letting it cook down? Am thinking maybe lemon zest might be a nice addition. Would you mix the apples up or just use cooking apples? So many options.
 
Cheers, that is what I was hoping. Gammon joint still has an hour and a half till it comes out the oven and then I am going to rest it for 20 minutes so got plenty of time. Will let you how how it comes out.
