Taking some fairly serious interest in these, largely from a "cleaner workspace" standpoint.

I see a lot of detail on what connectivity they HAVE (in most reviews) but not quite the gritty detail on what's needed to drive res/speed correctly so... some questions:

Do any of them happen to run to single TB4/5 connector for full 120hz+ 5k2k?
If stuck on devices with DP 1.4 - can they be run as a single or only 2x4k, borderless PBP (with a cable for each)?
Assuming TB4/5 - downstream TB ports are full bandwidth or?

Well... I'm pretty open to options.

Do any of them get 120hz+ at 5k2k (or basically anything else that's essentially "2x4K panels, side by side in 1 UW") down a single cable? Do any of them manage it down a single DP1.4a (I'd assume not but... hence the questions).

What is the typical cabling setup for a dual 4k ultrawide? Do any of them manage it on something I can squeeze down TB4 on a single cable? Am/would otherwise be considering a TB5/better DP/HDMI equipped laptop but... would sit on what I have a bit longer if I can get my dual 4K panels down to a single unit.

As I can do 4K @ 120hz *2 (1 DP 1.4a, 1 dp 1.4a alt mode) through a TB4 hub and other fun to a single TB4, I'm looking for a solution that'll might be able to do it without it being 2 screens.

All the modern options should handle 5K2K @ 120Hz with a single DisplayPort cable, that's well within the limits of bandwidth of DP 1.4 using DSC. The LG 45GX950A for example is a 5K2K 165Hz OLED and that works with a single DP 1.4 cable and appears as a single screen in windows etc. gone are the days of bodging together 2x displays and using multiple cables really.

Thunderbolt 4 should in theory support enough bandwidth as long as it uses "DisplayPort Alt mode" at v1.4 with DSC or above. TB5 doesn't necessarily offer any additional video bandwidth, it still relies on DP Alt mode and whichever version of DP is used. The important thing here is probably to make sure that 1) your laptop supports the relevant res/refresh rate over TB, using DP Alt mode, and 2) the screen you select supports the same spec. You may have some unusual considerations here though with your setup, I'm not sure.
