Getting a good chefs knife reshaped

I have recently inherited a good Wusthof Chefs knife. But it has over the years been sharpened with a steel resulting in a concave cutting profile.

This means that if just wont cut by rocking it (think turning knife shape). Plus enough metal has been lost that the resulting edge is thick and really hard to sharpen. (see this image http://www.egullet.com/imgs/egci/sharpen/sharpen4.jpg)

Can I get the knife reground so that the whole blade is made about 1mm thinner and reshaped so that the correct curved cutting profile is restored ?

Can anybody recommend a company that can do this ?
 
How much is the knife worth new?

You get everywhere ! If its not poncing on about your 5d3s and your 35mm L lenses it's in here :-)

To be honest it's not really about the worth. It's my mum's old knife and I remember sooo many lovely meals she cooked with it. She died a couple of years ago and I just don't use it for the reasons above.

I'll give sharpknives a call and see what they reckon they can do !
