If I update to GM via update on itunes (currently on beta 6) is that it then? I can continue to receive future updates via the phone itself (OTA)?

yes but honestly... its hours now, why bother? You'll get the OTA notification to update to the official release anyway I believe.

I could be wrong but isn't there a risk that the GM is also marked as a non public release meaning sometime in the future you'll need to update anyway when they kill off the betas?

Either way, this close to official the last thing I'd be doing is messing about with DFU updates the day before general release.

well either way you could select restore and it'll download the public iOS7 and install it for you rather than having to mess about.

From going on previous releases, it's around 10AM in California when they do it, so 6PM here. But of course they may stagger it further so as not to overload the servers.
