Getting music off an old iPod

A work colleague has an old iPod (4G possibly, maybe 3) but the laptop she used for iTunes has been stolen, leaving her with an iPod full of music but nothing to sync it with.

Is it safe to assume that if she installs iTunes on her new laptop and syncs the iPod that all the music that is currently on the device will be removed/replaced? And if so is there an easy-ish way of pulling all the existing music off so it can be added to the iTunes library and re-synched?

Or can you choose to only sync new music added to iTunes, leaving all the existing stuff on the iPod (but not in iTunes) where it is?
