Getting programme list in alphabetical order?

This may be a stupid question, but how do I sort my Programmes (Start -> All Programmes) into alphabetical order?

right click -> sort by name

Is it possible to move entries without losing the programme?
What about combining entries into folders?

right click over the start button, bottom-left and "open all users" you can mess around with folders and stuff in there!
