GFX Advice for upgrade

I'm looking to upgrade my mobo, cpu, and graphics card and have somewhere around £500 spend.
I've got a XP2500 on a Gigabyte NF2 Board with 1GB OCZ Premier 2.5-3-3-7 a 9600 256MB ATi card, also have an 80GB and 160GB ATA hdd's (which will be upgraded to sata at a later date) I'll probably need a new PSU as it's just the one that came with my case i have and it's 400W not sure which atx version. I know most folks think 1GB of ram isn't enuf now but i'll survive till the summer with a gig if i can get better graphics performance.

I want a MB and CPU i can just plug in, set to a nice overclock and forget about it, don't want to be constantly adjusting things in bios and the likes and worrying about temperatures.

I was thinking a DFI Lan Party board so i have the best base for overclocking, and a 144 Opty or a 3700, it's just the graphics card that I can't decide on. I tend to play games like AOE3 and other strategy games but sometimes games like FEAR. I'm looking to get well up the resolutions instead of the min spec i get with my 9600. I don't know if it's worth spending over £200 on a 7800GT or an extra £100 odd again for a GTX, or whether to go for an ATi card.

I'd also like to know what fan would be best to go with an opty or 3700. Right now i reckon i'd be happy with clock speeds of around 2500 or so. Don't want to have an unstable or hot or noisey machine, as it tends to be on 24/7 and i'm only in front of it a few hours a night during the week but my wife has to put up with it being on all the time in the living room.

So yeah let me know how you guys would spend my money. I'll stretch to £600 for a good enough reason it would just mean having to wait longer for the hdd, and mem upgrade.
