I currently have 5870's in xfire and a 23" 1080p monitor. Got a phenom 1090T @4Ghz.

Which single card solution would be best to move to if I get rid of my 5870's?

Something like a 7970/GTX680 would roughly be equal to your CF5870 performance (but without the disadvantage of poor performance for some poor multi-GPU scaling games)...but for graphic power any higher than that, your CPU would become a bottleneck (particularly if the game don't use up to 6 cores).
 
As far as i know, no card will bottleneck the CPU? The CPU normally bottlenecks the GPU. The CPU is constantly sending instructions to the GPU for processing. if it isn't doing this quick enough, then the GPU under-performs, hence the bottleneck. You can normally test for bottlenecking by overclocking (or underclocking) the GPU and if it makes no difference to GPU performance, then the CPU is bottlenecking. This can be proved further by increasing the CPU clock speed as it sends through further instructions.
 
Yeah as Huddy said the CPU bottlenecks the GPU.

your 950 is in a simular boat to the OP.. You maybe be able to go for a 770 but i'd stick to 680/7970.. and Xfire/SLI is sort of out of the question..
