gluten free

What is with lots of things being gluten free?

Isn't that is missing out of bread products that make it taste horrid and have bad texture

But it's all over the place not just a section on the shelf

How come food doesn't say "free from human body parts, toxic waste, cockroaches and rat excrement"

By saying that your customers know it doesn't have those, which is a good thing.
