Ok so at the moment i have an Asus 560 Ti.

I recently bought the amazing Asus 3d 27inch monitor and with windows 8 it will go to 2650 x 1600 (1440) but the GPU protests.

I was thinking of going SLI and getting another 560Ti. Or getting a 680?

What are the pitfalls of SLI?
The 560 i use is 1gb ram, can I still use SLI if the second card has 2048 memory?

The VRAM isn't cumulative so no it won't have 2048. What is the rest of your machine like? If you have a decent spec then I would say get a 670/7970 if you can afford it.

Unfortunately with 560 Ti SLI you'll be VRAM limited before GPU limited however you can still get some decent performance if you drop settings.
 
also your psu must have enough juice to support an additional gpu. anything less than 700-750w probably wont cut the mustard.
brandless psu will probably fail
