i know these games are renowned for tough boss battles etc, so are these games still somewhat of a challenge on easy mode??

Speaking from God of War 2, it is very easy on easy (mortal) mode, you will die more from failed quicktime events than actual fights. It's about the same on normal mode. God difficulty and above is where the game really gets tough.

I completed it on easy by flexing the little muscles that control my nostril hairs to move the joysticks and used my right buttock to press the buttons, this was all while i read war and peace and made a 10,000 piece puzzle too.

On god mode i fashioned some robotic arms out of a piece of solid awesome, boarded up my windows, unplugged my phone and for good measure killed all my friends in order to avoid distractions... still got my ass handed to me.

Difficulty settings that cover a broad level of skill rock.

Titan mode on GoW2 is stupidly hard, you have to make sure you don't get hit at all by the bigger enemies, such as the big statue and the minotaurs and gorgons.
