good camera for a noob

Hello all. Currently using a phone and a point and click camera which is about 5 years old.

I really want to get something that takes a powerful vibrant picture. Scenery and close up of the kids.

It needs to be fairly ready to go out the box but with some advanced options for when I get to grip with it. What would you recommended?

Budget would be around £300 - £500

I'd go for something like a Fuji X20. Assuming you don't want a DSLR.
