Hi all, Any last min thoughts? Is the Z68 not worth it if I don't have a SSD drive? Also does the cooler come with thermal paste?

Z68 also offers quicksync and supposedly better overclocking.

Here's a little preview of that particular board.

Everything else looks ok.

I think thermal paste comes pre-applied but theres no harm in having spare stuff available.
 
Yes cooler comes with TIM.

Z68 is debatable. The main thing behind Z68 is overclocking whilst using/of onboard gpu (which you won't be using), Lucid Caching (which we know little on atm) and SSD caching.

Bearing in mind the disaster that ASUS P67 boards were, might also be worth waiting for some reviews of the boards and end user comments before jumping into a purchase of one.

Spec wise, the Define R3 is actually better (albeit slightly smaller) than the R3 XL and ofc cheaper.
