I get regular blog emails from someone I was once in contact with but I can't seem to actually unsubscribe.

At the bottom of the emails it says "You have received this message because Fred Bloggs shared it with [email protected]. Unsubscribe from these emails."

I click on 'Unsubscribe', it takes me to a webpage 'Google+ Email Settings'
with two radio button options.

* Unsubscribe [email protected] from all Google+ email notifications
* Don't unsubscribe. Continue sending email notifications to [email protected]

I highlight the radio button to Unsubscribe my email address from all Google+ email notifications and click save and it then says 'settings saved'.

But I keep getting his emails and this has gone on for months. Also, I only want to unsubscribe from his emails, why should I have to unsubscribe from all google+ email notifications?

I'm not familiar with G+.
As a work around, I would log into your Gmail account and set up a few filter rules to block them.
Either block the sender's email address or keywords from the message itself.
Within the created filter, tell it to delete and not send it to the spam folder.
Once set up, you shouldn't receive any emails from the sender in your inbox.
