GPU Confusion???/

Depends on what reolution you are planning to run. With crazy resolutions, the sli/crossfire setups start to lag due to the two cores having to share memory, so I'd go for the single GTX280 in that case.

If you're planning on running more sensible resolutions, then go for the 4870 in crossfire, or wait for the 4870X2.
 
4870 in xfire would beat the gtx280, it would absolutely trash the 9800x2 SLI too.

EDIT: Personally I'd get a single 4870, no game it can't run.
 
The benchmarks for 4870s show they can handle 2560x1600 very well especially in crossfire. You'd be better off getting 2 4870s, they'll be less than a GTX 280 (excluding the leadtek one) but be a lot faster.

The GTX280s aren't worth the money you pay, they're fast, yeah, but you get almost the same speed from a 4870 at less than half the cost. Untill the GTX 280s are down to around £250 or less, will they truly be worth their cost.
